I love using herbs with everything I make in the kitchen. Old Bay is one of my favorites growing up as a kid, this is a Baltimore Maryland thing. It is spreading through the world more now but a crab cake is not a crab cake without it!! Or steamed shrimp for that matter. There are so many recipes to make with so many herbs in the world. Even the weeds that you would never look twice at can add flavors to your salads such as dandelion, calendula, sage, and many more.
A recipe that is great for one of tomato sauce;
In an oven roast four red peppers 10 roma tomatoes cool and clean peppers core tomato.
12 diced tomatoes in a pot with palm full of fresh minced garlic
4Tb chopped fresh Basil
2 Bay leaves optional
½ cup brown sugar
2 tsp red pepper flakes
1 cup red wine
With an emersion blender mix all together bring to a boil and simmer 30 min add addition ingredients depending on your use oregano for spaghetti or pizza sauce ect. This is a base formula that you can use for just about any dish you wish. Add some balsamic vinegar to sweeten more as well and instead of salt use red wine vinegar. The more herbs you use for flavor the less salt you will need in your dishes whatever you create. A small amount of vinegar will do the same thing as salt by bringing out the flavor in food without making it sour. Just do not use white that is only good for cleaning. Add fennel to give a sweet kinda minty licorice flavor.
There are so many things that you can make just by adding a few new ingredients to this have fun and enjoy!!!!
